Any cheese I have tried and don't like gets used as dog treats. I dunno bout your hounds, but mine will practically do back-flips for things like gorgonzola, or that one that smells like unwashed feet whose name escapes me...
I have developed a taste for some cheeses over the years. I like goat cheese/feta on salads. Most other cheeses, I prefer on sandwiches/melted. I love grilled Velveeta sandwiches. I know Velveeta isn't recognized as a real food, but I like it.
I'm not one to sit down and sample a cheese tray or anything. But I will eat some cheeses...except the ones with blue veins, apparently.
We're just honorary Bubbas -- me because I eat a lot of smoked meat. But my favorite BBQ sauce comes from a Rib Soack in north lower Michigan. Clearly I'm a wuss Bubba.
Now I *love* baked brie. Schmeared on freshly baked french bread or pane, with sliced apples or walnuts or shrimp or alone. That and a glass of Chardonnay, and I'm a happy camper.
Things I don't comprehend is why some local stores have Cabot's varying degrees of sharp, sharper, and exceedingly sharp cheddar, and the quite bland Monterey Jack, but no mild Cabot's cheddar. As a sign of multiculturalism, most of the Cabot's cheeses have both kosher (Tablet K) and halal certifications on them-but not e.g. the beer cheese (can't remember which brand of beer).
