Parsnips, peeled and diced and cooked with white potatoes and a couple of cloves of garlic. And thyme. Salt & pepper. Drained, then mashed with butter and half-and-half. Served with the homemade cranberry-orange sauce and the pork loin chops wrapped in bacon and rubbed with rosemary.

I was pleased. And I may never eat mashed white potatoes by themselves again.

Hope everyone else ate well.

I love parsnips. I used to make Welsh pasties with lamb and potatoes parsnips, rutabegas, lamb and onions. Then I stuffed it into pastry shells. Alas! My days of eating wheat and butter are long over.

I mashed my potatoes with about 1 tsp of horseradish for every pound of potatoes. YUM!

Last night we had prime rib, steamed spinach, oven roasted potatoes, and GFCF pumpkin pie. It was a good family gathering.

I always thought that parsnips would taste starchy, but as soon as I heard that they tasted like carrots, I got some.

I was going to get some more, but couldn't find them. So I bought turnips instead. Another veg I've never had before. Next shopping trip--celery root.
