Banana bread

I always like to have some kind of quick bread around the house for easy snacking. I really like this banana bread recipe because I don't need a mixer--one bowl and utensils is all.

I have started goosing it a bit by adding a tablespoon of pumpkin pie spice. Today, for some reason, I also added a few twists from the black pepper mill, I think because I've developed a taste for chocolate flavored with chili pepper bits and thought pepper might go well with spicy fruit bread. I'll know tomorrow if it added anything. I like letting the bread sit overnight before I cut into it. It doesn't taste as good when eaten fresh. No time for the flavors to meld.

It's a flexible recipe. I've added only 2 medium bananas, and wound up with a drier cake-like bread with a crunchy crust. When I add 3-4 medium bananas, I get a bread that keeps on the kitchen counter and stays moist for a week.

In other news, two loads laundry washed and in the dryer.

You seem to always be doing something. You make me feel like a complete lazy slob after reading your posts. I am curious though how the banana bread comes out.

I noticed in your icons a USF bulls icon. How did you become a USF fan?

The banana bread tasted like usual. I thought I could detect a hint of black pepper, but I wasn't sure. That's probably for the best.

I went to USF. Class of '81, BS in Chemistry. I never kept up with their sports program after I graduated, but I was so surprised to see how well their football team was doing. They've dropped out of the Top Ten, unfortunately--a loss to Pitt. But they're still Top 20.

It's refreshing to see some USF fans around the nation regardless of the reason. They are so close to being able to challenge for a good bowl game but they can't seem to keep their focus for the long haul.

Living in Tampa I am just happy to see them getting some notoriety, it will help recruiting for the years to come.

Check out www.chocosphere.com for some really interesting flavor combinations. My personal favorite is Dolfin's Chocolat Noir Au Poivre Rose, or Dark Chocolate with Pink Peppercorns. Really nice.
