Five items make a Sunday afternoon post
Jan. 25th, 2009 04:49 pm1) Made the chicken in the new crockpot. A 7-lb roaster, set on a bed of chopped onions, carrots, celery, and flatleaf parsley. A teaspoon or so of the roasted garlic from a jar. Stuffed the cavity with some of the veggies, and sprinkled some Old Bay seasoning on the top. Some recipes I saw said add water--a half cup or a full cup--if cooking on the HIGH setting. Some said not to add any liquid since the chicken and veggies would exude their own. I played it safe and added a cup of white wine.
I used the MEDIUM HIGH setting, which was supposed to take six hours. The chicken was done in four hours, half-submerged in juice, meat sliding off the bones. Extremely juicy, nicely flavored, the best chicken I've had in a long time. Wound up with a couple of cups of stock, which was lovely as well, dark yellow and syrupy. The chicken was a Purdue roaster, which is a nice looking bird but not the best. I can only imagine what a top quality free range chicken would taste like if cooked this way.
Side dishes--fork-mashed sweet potatoes and carrots from the pot. Lots of leftovers, including trimmings for the pups, who watched the proceedings with interest.
2) it's cold, low teens. Same for tomorrow. At least it looks as though they're not predicting snow.
3) Will spend the evening reading the wip, the NHL All-Star game playing in the background. Then will come the second half of Wuthering Heights, a zippy way to end the evening.
4) Gaby has taken to breaking low branches off the sand cherry. I wondered where the scattered wood was coming from. I thought King had started raiding the woodrack again.
5) Tomorrow's Monday already. *ick*
