Yellow carrots. If the stuff I've been reading is up to date, the lighter color means they lack the amount of antioxidant compounds available in their orange cousins. They don't taste as good. And they look odd. So, why?

Variety is the spice of life? Only reason I can think of. According to the episode of "Good Eats" about carrots, the development of the orange version prevalent today was at least partially an attempt to curry favor with the House of Orange, so I guess you never know.

Yellow or purple were early colors, according to the farmers we buy from at the farmers' market. They aren't as sweet as orange but they roast up nicely.

I imagine purple would be pretty nutritious. Not sure about the yellow, but I'm so used to orange that the yellow look faded to me.
