I've seen pear tarts, which usually consist of halved pears nestled in some sort of custard cream, in a tart shell. Very good. And I made some pear muffins a few weeks ago. Very, very moist, even though I used white w/w flour and wheat germ to soak up the liquid. Also, sweet.
Pears can be watery, which can make for tricky baking.
